Open Face Roast Beef Sandwich

  • 1+1/2 cup sliced bell peppers
  • 1 cup sliced mushrooms
  • 3/4 cup sliced red onion
  • 2 tbsp mayo
  • 2 tsp horseradish
  • 4 slices rye bread
  • 8 oz deli roast beef
  • 4 tbsp shredded swiss

Preheat broiler

Saute peppers, mushrooms, onions 5 minutes.

Combine mayo and horseradish. Spread over rye.

Divide roast beef among rye slices. Divide sauteed veggies over rye slices. Top with 1 tbsp cheese for each slice.

Broil until cheese melts.
