Mexican Pork Loin
- 4 pork chops
- 16 oz pkg baby carrots
- 1 onion, chopped
- 1 green pepper, chopped
- 1 15 oz can black beans, drained
- 1 20 oz jar chunky salsa (hot)
- red pepper flakes
Place carrots, onion, pepper, beans in bottom of crockpot. Top with pork. Pour salsa all over. Add red pepper flakes. Cover, cook on low 8-9 hours until pork is thoroughly cooked and very tender.
