Green Beans with Potatoes and Bacon

  • 4 cups water
  • 2 cups fresh green beans (cut into 1-2″ pieces)
  • 4 small new potatoes scrubbed and cut into pieces
  • 1.5 tsp salt
  • 5 slices bacon
  • 1/4 cup chopped onion
  • 1/4 tsp black pepper

1. Place the water, 1 tsp salt and potatoes in a medium saucepan and bring to a boil over medium-high heat.  Reduce heat a bit and cover; simmer for 5 minutes.

2. Add green beans to boiling mixture - bring back up to a boil, then cover again and boil for 10-12 minutes or until beans and potatoes are tender.  Drain the water and set aside.

3. Fry bacon until crisp.  Remove and cut into small pieces.  In the bacon grease, fry the onion until tender.  Add this mixture to the bean & potato mixture.  Toss until well coated with bacon and onion.  Sprinkle with remaining salt and pepper and serve.
