French Tomato Soup
- 3 tbsp butter
- 1 med onion
- 6 oz. tomato paste
- 4 cups beef broth
- 1 large tomato
- 1 cup shredded swiss
- 1 cup sour cream
- 1 cup croutons
- salt
- pepper
Puree butter, onion, paste. Pour into large pot, cook over high heat, stirring until mixture boils. Add broth and finely chopped tomato. Heat through, season with salt and pepper. Garnish with cheese, sour cream, croutons.
