Chicken Divan

  • 2 packages frozen broccoli, cooked and drained
  • Slices of cooked chicken (or turkey) breast
  • 2 cans Cream of Chicken soup
  • 1 cup mayonnaise
  • 2 Tablespoons lemon juice
  • 1 Tablespoon curry powder
  • salt and pepper (as desired)
  • 1 cup grated sharp cheddar cheese
  • Ritz cracker crumbs

Bottom Layer – 2 packages frozen broccoli, cooked and drained
2nd Layer – Slices of cooked and boned chicken or turkey breast
3rd Layer – Mix 2 cans undiluted Cream of Chicken soup, 1 cup mayonnaise, 2 tablespoons lemon juice, 1 tablespoon curry powder, salt and pepper (as desired). Pour over all.
4th Layer – Cover with 1 cup grated sharp cheese (I use more than a cup)

Sprinkle Ritz cracker crumbs over all and bake 30 minutes in 350 degree oven. Baking dish should be about 9″x13″
