Black Bean Salsa

Stolen from Kerry Trout

  • 2 15-oz can black beans, rinsed & drained
  • 1 17-oz can corn (I actually use a tiny can of white & a tiny can of yellow)
  • 2 lg tomatoes, chopped
  • 1 avocado
  • 1/4 red onion, chopped finely
  • 4 T lime juice
  • 2 T olive oil
  • 1 T red wine vinegar
  • 1/2 t pepper
  • 1 t salt
  • tabasco

Mix it all together and chill for a few hours.
