Black Bean Salsa
Stolen from Kerry Trout
- 2 15-oz can black beans, rinsed & drained
- 1 17-oz can corn (I actually use a tiny can of white & a tiny can of yellow)
- 2 lg tomatoes, chopped
- 1 avocado
- 1/4 red onion, chopped finely
- 4 T lime juice
- 2 T olive oil
- 1 T red wine vinegar
- 1/2 t pepper
- 1 t salt
- tabasco
Mix it all together and chill for a few hours.
